On 10th December 2020, the EU Official Journal published the COMMISSION IMPLEMENTING REGULATION entering the name Mozzarella di Gioia del Colle in the register of protected designations of origin. After 20 days from this publication, all the bureaucratic procedures for setting up the Protection Consortium and the production authorizations – preceded by company audits – will begin.
The “Mozzarella di Gioia del Colle DOP” is a fresh kneaded cheese of absolute typicality, produced only from whole cow’s milk with the addition of whey starter, without preservatives, additives or adjuvants, whose geographical area of production is included in the territories of the Murgia of Bari and Taranto.
