Ingredients for 4 mini portions
- 2 medium-small zucchini
- 1 rye or wholemeal
- bread loaf
- 20 shavings of Caciocavallo Silano PDO
- 8/10 slices of smoked salmon
- Extra virgin olive oil to taste
- Ground black pepper to taste
- Juice of half a lemon Fresh mint
Method
01 Marinate the zucchini (previously thinly sliced lengthwise) with a pinch of salt, olive oil, lemon juice, and mint leaves, for about 15 minutes. 02 Slice the Caciocavallo and the bread to the same thickness as the zucchini. 03 Using a circular mold, layer all the ingredients, including the salmon, to obtain a dynamic, wavy shape.

Method
01 Chill a flute, 02 add all the ingredients to the glass and stir, 03 then garnish with a sprig of fennel.
