Tacos Silano

Ingredients for 4 mini portions

  • 400g Caciocavallo Silano DOP grated into matchsticks
  • Fresh thyme
  • 500g spinach
  • A knob of butter
  • 1 garlic clove
  • Salt, to taste
  • Pepper, to taste
  • 4 slices of mortadella
  • 100g pistachio crumble

Method

01 In a non-stick pan, form the classic circular taco shape and sprinkle with cheese and thyme leaves. 02 Heat for a few minutes on both sides and fold over a rolling pin to obtain the classic taco shape. 03 In a hot pan, sauté the spinach with butter and garlic. 04 Fill the tacos with the spinach, mortadella, and pistachios.

  • 30ml Negroamaro pink bubbles
  • 90ml Sanpellegrino
  • citrus tonic water

Method

01 Chill a lowball glass, 02 add a large ice block or ice cubes, then 03 add all the other ingredients and stir. 04 Garnish with a lemon slice.
